Ingredients
- 1 ½ ripe bananas (mashed)
- 1 medium zucchini (grated)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup brown sugar
- ¼ cup vegetable oil or melted butter
- 1 egg
- 1 teaspoon vanilla extract
- ½ cup chopped nuts or chocolate chips (optional)

Instructions
1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
2. In a medium bowl, mix together flour, baking soda, cinnamon, and salt.
3. In a large bowl, beat the sugar, oil (or butter), and egg until smooth. Stir in mashed bananas and vanilla extract.
4. Add the grated zucchini and stir until combined.
